Gifts in a Jar

Many of the recipes, if they can go into a jar can go into a zip lock bag, or you canextend shelf life with a vaccuum sealer.

BLACK EYED PEA SOUP MIX
3 C dried black-eyed peas

Seasoning Packet
1/2 C dried minced onion
6 Tbs chicken bouillon granules
2 Tbs dried parsley flakes
1 Tbs sugar
2 tsp dried minced garlic
1 tsp chili powder
1 tsp onion powder
1/2 tsp pepper
1/2 tsp garlic powder

Place 2 cups of the peas into a wide mouth 1-quart canning jar. Mix and place the seasoning in a small plastic bag. Place the packet on top of the peas. Add the remaining peas. Attach a gift tag with the cooking directions.

1 jar Black-Eyed Pea Soup Mix
2 (14 ounce) cans diced or crushed tomatoes

Remove seasoning packet and set aside. Rinse peas and place in a large microwave safe dish. Cover with water, 1 to 2 inches over the top of the peas. Cover the dish loosely with plastic wrap and microwave on high for 15 minutes, rotating after 7 minutes. Drain and rinse peas. Place peas in a large soup pot. Add 10 cups water, tomatoes and seasoning packet. Cover, bring to a boil. Lower heat, cover and simmer 1 1/2 hours or until peas are tender. Stir occasionally.

CHICKEN NOODLE SOUP MIX
4 C wide egg noodles (The recipe calls for the noodles last, but some people like the look of the spices running through the noodles).
2 Tbsp dried minced onion
2 Tbsp chicken bouillon granules
2 tsp celery flakes
1 tsp pepper

Layer the ingredients in the order given into a wide-mouth 1 Qt. canning jar. Pack each layer in place before adding the next. Attach a gift tag with the cooking directions.

Cooking Directions
1 jar Chicken Noodle Soup Mix
2 (5 oz) cans chicken

Bring 10 cups of water to a boil in a large soup pot. Add the Chicken Noodle Soup Mix. Add chicken, breaking it up well with a fork. Bring to a boil, lower heat and simmer uncovered for 12-15 minutes or until noodles are tender.

LOVE SOUP MIX
1/3 C beef bouillon granules
1/4 C dried minced onion
1/2 C dried split peas
1/2 C macaroni or alphabet pasta
1/4 C barley
1/2 C lentils
1/3 C long-grain white rice
1 C tri-colored spiral pasta (in a bag)

Layer the ingredients in the order given into a wide-mouth 1 Qt. canning jar. Pack each layer in place before adding the next ingredient. Mix and place the seasonings in a small plastic bag. Place the packet on top of the beans. Attach a gift tag with the cooking directions.

1 jar Love Soup Mix
1 pound ground beef, browned and drained

Remove the tri-colored pasta from the Love Soup Mix and set aside. Place the rest of the soup in a large soup pot. Add 12 cups water. Bring to a boil. Lower heat and simmer for 45 minutes. Add tri-colored pasta, ground beef, and simmer 15 minutes more.

RAINBOW BEAN SOUP MIX
3/4 C Dry Red Beans
3/4 C Dry Great Northern Beans (small size)
3/4 C Split peas
3/4 C Lentils, preferably red or yellow for color
3/4 C Dry Black Beans

Seasoning Packet
2 Tbs beef bouillon granules
2 Tbs dried minced onion
2 Tbs dried minced parsley flakes
2 tsp dried basil
2 tsp powdered Lemonade mix with sugar
1 tsp chili powder
1 tsp dried oregano
1 tsp salt

Layer the ingredients in the order given into a wide-mouth 1 Qt. canning jar. Pack each layer in place before adding the next ingredient. Mix and place the seasonings in a small plastic bag. Place the packet on top of the beans. Attach a gift tag with the cooking directions.

Cooking Directions
1 Jar of Rainbow Bean Soup mix
4 carrots, diced (optional)
2 stalks of celery, diced (optional)
1 28 oz can of crushed tomatoes
1 lb. of browned hamburger (optional)

1. Place the bean soup mix in large soup pot. Add 12 Cups of water and bring to a boil.
2. Cover and remove from heat and let sit for 1 hour.
3. Return pot to heat, add tomatoes and hamburger. Cover and simmer 1 hour.
4. Add veggies to the pot… and simmer 1 more hour or until beans are tender.

Microwave Directions
Remove seasoning packet from Rainbow Bean Soup Mix and set aside. Rinse beans and place in large microwave safe dish. Cover with water, 1" to 2" over top of beans. Cover dish loosely with plastic wrap and microwave on high for 15 minutes, rotating after 7 minutes. Drain and rinse beans very well.
Place beans in very large soup pot. Add 8 cups water, cover and bring to boil. Lower heat, cover and simmer 1 hour or until beans are tender. Add can crushed tomatoes and seasonings packet and simmer for another 1/2 hour.
TURKEY NOODLE SOUP MIX 1
1 cup uncooked fine egg noodles
1 1/2 tablespoons chicken-flavored bouillon
1/2 teaspoon ground black pepper
1/4 teaspoon dried whole thyme
1/8 teaspoon celery seeds
1/8 teaspoon garlic powder
1 bay leaf

Combine all ingredients in a medium bowl. Store in an airtight container.

Attach these instructions to the jar:

Turkey Noodle Soup:

1 package Turkey Noodle Soup Mix
8 cups water
2 carrots, diced
2 stalks celery, diced
1/4 cup minced onion
3 cups cooked diced turkey

Combine the Turkey Noodle Soup Mix and the water in a large stockpot. Add the carrots, celery and onion and bring to a boil. Cover the soup and reduce the heat to a simmer. Simmer for 15 minutes. Discard the bay leaf. Stir in the turkey and simmer an additional 5 minutes. 
TURKEY NOODLE SOUP MIX 2
4 C tri-colored spiral pasta
Seasoning Packet
3 Tbsp. chicken bouillon granules
1 tsp. pepper
1/2 tsp. dried whole thyme
1/4 tsp. celery seeds
1/4 tsp. garlic powder
1 or 2 bay leaves
Layer the ingredients in the order given into a wide-mouth 1 Qt. canning jar. Set the bay leaf against the side of the jar before filling with noodles. Attach a gift tag with the cooking directions.
1 jar Turkey Noodle Soup Mix
2 carrots, diced
2 stalks celery, diced
1/4 cup minced onion
3 cups cooked, diced turkey
Place the Turkey Noodle Soup Mix in a large soup pot. Add 12 cups of water. Add the carrots, celery and onion and bring to a boil. Cover, lower heat and simmer for 15 minutes. Discard the bay leaf. Stir in the turkey and simmer an additional 5 minutes.
WHITE BEAN CHOWDER MIX
1 2/3 C. dried great northern beans
1 2/3 C. instant potato flakes in a thin zipper bag
Seasoning Packet
1/3 C. imitation bacon bits
1/3 C. dried minced onion
2 Tbsp. chicken bouillon granules
1 tsp. pepper
1/2 tsp. celery powder or flakes
1 tsp. sage

Layer the ingredients in the order given into a wide-mouth 1 Qt. canning jar. Mix and place the seasonings in a small plastic bag. Place the packet on top of the bag of potato flakes. Attach a gift tag with the cooking directions.

1 jar White Bean Chowder Mix
1 (14 ounce) can diced or crushed tomatoes

Remove seasoning packet and bag of potato flakes and set aside. Rinse beans and place beans in a large microwave safe dish. Cover with water, 1-2" over top of beans. Cover dish loosely with plastic wrap. Microwave on high for 15 minutes, rotating after 7 minutes. Drain and rinse beans well. Place beans in large soup pot. Add 8 cups water and 1 can diced or crushed tomatoes (14 ounces). Add seasonings from packet. Stir well. Bring to a boil.

Reduce heat, cover and simmer 1 hour and 45 minutes. Stir in potato flakes. Turn off heat. Cover and let stand 5 minutes. Serve immediately. If not serving immediately, wait until ready to serve to add the potato flakes. Makes 9 cups soup.
